The name goes back to the Hussars of the Habsburg cavalry; the method goes back to every Austrian grandmother who let a child press the hollows. A perfect first bake.

You'll need

  • 1⅔ cups all-purpose flour
  • 10½ tbsp (1⅓ sticks) soft unsalted butter
  • ½ cup + 1 tbsp powdered sugar
  • 2 egg yolks
  • 1 tsp vanilla extract
  • ⅓ cup red currant jelly — or seedless raspberry jam

How to bake it

  1. Beat butter, powdered sugar, yolks and vanilla; work in the flour. Chill 30 minutes.
  2. Heat the oven to 350 °F (175 °C). Roll small balls, set on parchment, press a hollow into each.
  3. Bake 12–14 minutes until the edges barely colour.
  4. While warm, press the hollows again gently; fill with warmed jelly once cool.

Oma's tip: Dip your thumb in flour before pressing — the dough won't stick.
